The Best Pepperoncini Ranch Roast



Makes 9 Servings, 1 cup per serving for 7 Smart Points.


What you need:

- 2.42 oz beef chuck roast

- 13 mild pepperoncini ( if the pepperoncini are hot I recommend adding 3-5)

- 1/4 cup pepperoncini liquid

- 1 oz packet of dry ranch seasoning mix

- 1 oz packet of dry onion mix

- 1 cup diced carrots

- 1 cup diced white onion

- 1 pound diced red potatoes

Seasonings:

- salt + pepper, minced onion


How to make:

Step1- Cut your veggies and potatoes into dice size pieces. Add your roast into the crokpot, then add your seasonings of salt + pepper, and minced onion to the roast.


Step2- Add your veggies and potatoes into the crockpot, then add your ranch and onion dry mix, add your pepperoncinis on the top.


Step3- Place your lid on and cook on high for 5 hours, take your beef out and shred then place back into the crockpot for additional 15 minutes.
