Creamy Tuscan Chicken Recipe

What you need: - 24 oz chicken breast ( I used chicken breast tenders / cut thin) - handful of fresh spinach - 1 cup sun dried tomaotes without oil - 1/2 cup great value finely shredded parmesan cheese - 1 cup good & gathered ultra pasterurized half & half - 1/2 cup fat free reduced sodium vegetable broth - olive oil spray Seasonings: - salt & pepper - garlic powder - minced onion - dried oregano How to make: Step 1 - Cut your spinach into small pieces, then measure out all your ingreidents your 1/2 cup broth, 1/2 cup cheese, 1 cup sun dried tomatoes, and 1 cup half & half. Step 2- Spray your skillet with olive oil spray you will want to coat the skillet well, then add your chicken breast tenders into the pan and cook on each side for about 5 minutes (10 min total) on medium heat or until the chicken is lighlty cooked. Once chicken is done place aside on a plate and leave the skillet on the burner for your next step. Step 3 - Add a few more sprays of olive oil, then add your broth, spinach, sun dried tomatoes and stir those together until spinach is softer no longer than about a minute the spinach just needs to be softer not fully cooked, then add cheese, half and half, and seasonings mix those together well stirring for about 2-3 minutes until cheese starts to melt down. Step 4 - Let this sauce simmer to a low bubble then add your chicken back into the skillet place on medium low heat and let chicken and sauce simmer together for about 12 minutes. Then turn burner off and serve your dish. Point Break Down: Chicken makes 5 servings, 1 serving is 2 pieces of chicken for 4sp! I had with brown rice pasta I used Tinkyada Pasta Joy Ready Brown Rice Pasta - 2 oz is I added 1 tbsp finley shredded parm cheese on top which is 0sp!6sp uncooked, and about 2/3 cup cooked!

I LOVE this recipe! I am a long time life time member and this was a great meal! My hubby requested it twice in the same week! I skip the pasta and just have a side salad or 1/2 baked sweet potato! Thanks!
