Chicken and Gravy Stuffing Casserole

What you need:

- 4 chicken breast, small / 4 cups shredded

- 1 box of 6 oz chicken stuffing mix

- 1 can of 14.5 oz chicken broth

- 2 long carrots, diced small

- 1 white onion, diced small

- 1 can of 10.5 oz 98% fat free cream of chicken

- 2 packets chicken gravy

- 1/3 cup light sour cream

- seasonings: salt + pepper, garlic + onion powder, and dried parsley.


How to make:

Step1- Cut your onions and carrots into dice size pieces. Also shred your chicken breast you've cooked.( I boiled my chicken breast prior)


Step2- In a pot sprayed with olive oil spray add your onions, and carrots until they are soft then add 1/2 cup chicken broth and simmer for about 5 minutes. Next add your shredded chicken, seasonings, can of cream of chicken, sour cream, half of the stuffing mix, and mix all together. Then add into a casserole dish, add other half of stuffing mix to the top.


Step3- Bake on 375 for 30-35 minutes


Step4- Make your chicken gravy followed by directions on package and pour gravy on top once casserole is finished. Save gravy in a container to add to casserole when you eat it.
