LUNCH GNOCCHI SHEET BAKE

Made 5 servings / 1 cup per serving

SMART POINT:

1 cup is 5 smart points

What all you need:

- 17.6 oz packet of archer farms mini potato gnocchi

- 1 yellow pepper

- 1/4 purple onion

- 5 garlic cloves

- 1/3 cup shredded Parmesan cheese ( I use Frigo brand)

- salt, garlic powder, lemon pepper, dried parsley, and minced onion

How to make:

- slice your vegetables into long slices, peel your garlic cloves.

- on a baking sheet spray with Parmesan spray then add gnocchi.

- add your vegetables, spray one more time, then add garlic cloves, seasonings, lastly shredded cheese.

- bake on 430 for 25 minutes
