L U N C H / Shrimp Fajita Bowl


Makes 4 bowls and each bowl is 2 SP ( avocado not included in sp)

What you need:

- 1 lb shrimp, peeled

- mulit color baby peppers

- 1 packet of fajita dry seasoning

- 1/4 cup brown rice per bowl

- 1 tsp corn starch

- tri color coleslaw mix

- 3 tbsp sams choice cilantro lime vingerette dressing

Optional toppings - lettuce, salsa, and avocado


How to make:

Step1 - Wash, clean, and peel your shrimp.


Step2- Then spray your skillet with olive oil spray add in your peppers with half of your fajita mix with a splash of water and cook your peppers until soft. Once peppers are done take out and set aside.


Step3- Now toss in 1/2 package of fajita mix in bowl with the shrimp then add to skillet also add your 1 tsp of corn starch and cook your shrimp. Once shrimp is cooked take out of skillet and place aside.


Step4- In a bowl mix your slaw and 3 tbsp cilantro lime dressing together until slaw is coated well.


Step5 - Assemble your bowls add 1/4 cup rice, shrimp, peppers, and slaw. Optional serve with salsa and avocado.
