Breakfast Sweet Potato & Egg Casserole

Made 8 servings and 1/8 th of casserole is only 1 Smart Point


What you need:

- 8 eggs

- 1/3 cup sun dried tomatoes

- 1 cup egg whites

- 3 slices of turkey bacon

- 1/2 cup spinach

- 1 cup diced sweet potatoes

- 1 cup diced white onion

- salt, pepper, garlic powder, Mc Cormick's Garlic & Herb seasonings (optional this is what I just like to use)


How to Make:

Step 1: Chop your sweet potatoes and onions up in small dices enough for 1 cup each,chop your spinach into small pieces. Next beat your eggs and add your 1 cup egg whites, cut your bacon into small dices. Last add your sun dried tomatoes and seasonings and whisk all ingredients together.

Step 2: Next in a casserole dish of your choice add oil spray, then add your egg mixture into dish. Bake on 375 for 40-45 minutes check with fork when it's done
