Blueberry Oatmeal Bread

Makes 11 slices and 1 slice is 6 Smart Points and so worth it!


What you need: - 1 1/3 cup room temp water - 1 cup oat flour - 3 cups white flour - 1/2 tbsp baking powder - 2 tsp instant yeast fast acting - 4 no cal sweetner ( note I recommend adding more sugar packets maybe 6-7) - 2 tbsp coconut oil - 2 tsp sea salt - blueberry - 2 tbsp crushed walnuts What to do: Step 1: Use 1 cup rolled oats in a food processor to make into oat flour, place into a big bowl, microwave your oil, next add your oat and white flour, oil, water, plus all other ingredients into the bowl, mix until it is a dough form. Place a towel over the bowl and let sit for 25-30 minutes Step 2: Place flour on the surface you will be kneeding your dough. Take dough out of bowl after it has sat and kneed your dough for up to 8 minutes using your hands, then spray a clean new bowl well with oil spray, place dough back into bowl with oil and place towel over and let sit for 40 min Step 3: Take dough out of the bowl, add your blueberries and walnuts inside then form a log, top with walnuts, and place in bread pan, Bake on 350 for 45 minutes
