B R E A K F A S T / Mexican Sausage Breakfast Bubble Bake


Makes 8 large servings for 5 Smart Points. Note you could make 10 smaller servings for 4 Smart Points.


What you need:

- 12 large eggs

- 2 ingredient dough (equal parts 3/4 cup flour + 3/4 cup non fat plain greek yogurt)

- 16oz lean jennie o breakfast turkey sausage

- 1 cup of cheese 1/2 cup reduced fat mexican blend and 1/2 reduced fat mozzerella shredded cheese

- 2 tbsp taco dry seasoning mix for the sausage

- 2 roma tomatoes, and 2 stalks of green onions

- 1 can fire roasted and peeled green chilies, drained

- 1/2 cup fat free half and half

- onion, garlic powder, and salt + pepper


How to make:

Step1: Preheat oven at 350 and spray a casserole dish with oil spray.

Step2: Make your 2 ingredient dough, then In a medium skillet add your sausage and cook until no pink remains then add 2 tbsp of taco seasoning and mix well together.

Step3: In a bowl beat your eggs and add your drained green chilies, 1/2 of your shredded cheese, your half and half, tomatoes and green onion , seasonings, and mix together.

Step4: In the casserole dish break apart your dough and add your dough to the bottom of casserole dish, then your sausage, next pour your egg mixture in , , lastly add the 1/2 cup of cheese to the top and Bake on 350 for 40-45 min or until cooked
